Zutaten

Marinade 

  • 1 Dose Bio-Jacky F. Jackfruit 
  • 2 EL Soja Soße 
  • 1 EL Vegane Fischsoße 
  • Nam Tok Jackfruit Salat 
  • 2 Romana Salatherzen
  • 1 Bund Frühlingszwiebeln 
  • 2 Schalotten
  • 1 Limette
  • 1 TL Zucker
  • 1/2 TL Chilliflocken 

Kräuter

  • 1/2 Bund Koriander 
  • 1/2 Bund Minze 

Dazu

  • 250g Klebreis oder alternativ Jasmin Reis

Ablauf

  1. Für den Salat die Jackfruit mind. 1 Stunde besser über Nacht marinieren. In einer Pfanne die Jackfruit in Öl für 4-5min. anbraten und danach auf ein Backblech tun und ab in den Ofen bei 180 Grad Umluft für 12 Minuten! In einer kleinen Pfanne eine Handvoll rohen Klebreis für den Salat anrösten.
  2. Klebreis zubereiten: Dieser muss gründlich gewaschen werden und über Nacht in kalten Wasser einweichen! Dann in einem Korb wie im Video oder einem Feinsieb den Reis über Dampf für etwa 20 Minuten garen bei der Hälfte drehen!
  3. Ran ans Messer! Frühlingszwiebeln in Ringe schneiden. Schalotten ebenfalls in Ringe schneiden. Kräuter fein hacken und alles zusammen in eine Große Salatschüssel füllen. Limette halbieren und die Hälfte drüber pressen.
  4. Chilliflocken und Zucker dazu geben! Mit Pfeffer und Fischsoße abschmecken. Es sollte säuerlich-süß schmecken und die einzelnen Zutaten wie z.B die Säure der Fischsoße sollte nicht überwiegen!
